Let us do all the work this year and deliver a complete feast from Turkey to cheesecake to your door on the day before Thanksgiving. The meal includes organic free-range turkey sliced and ready to eat, garlic mashed potatoes, turkey gravy, wild mushroom bread stuffing and a signature cranberry pecan relish that’s good on just about anything Thanksgiving. My sweet potato casserole recipe is one handed down from my grandmother and has the added touch of ginger It’s topped with a yummy pecan topping that you might want to make extra of because it’s a great snack.(no marshmallows here!) It’s delicious and a great way to impress your friends so I’ve included the recipe.

Baked Gingered Sweet Potato Casserole

4 cups of cooked mashed sweet potatoes

1/2 cup of unsalted butter melted

1/4 cup of brown sugar

4 tablespoons of molasses

4 large eggs, beaten

1/2 cup of heavy cream

1 teaspoon ground ginger

1 teaspoon fresh ginger

1 teaspoon cinnamon

2 teaspoons vanilla extract

Wash and prick sweet potatoes with a fork. Place on a sheet tray at 475 for 1 hour until potatoes look shrivelled and soft. Let cool, peel and scrape sweet potatoes in a bowl. Add melted butter, sugar and spices. Use a hand mixer to combine. In a different bowl beat eggs and cream together until frothy then pour into potato mixture and mix together. Pour everything into a buttered pyrex dish. Cover with foil and cook in oven at 350 for 40 minutes. Uncover sprinkle with praline topping and cook for 20 more minutes until bubbly and browned on top.

Pecan Topping

1 cup of pecans chopped

1/2 stick of butter

2 tablespoons of chopped candied ginger

4 tablespoons of brown sugar

1 teaspoon of cinnamon

1 teaspoon of salt

1/4 teaspoon of black pepper

Sprinkle of chili flakes

In a non-stick pan melt the butter and add the pecans tossing to keep from sticking. Add sugar, ginger and spices and keep stirring until pecans start to brown. Taste for salt, sugar, spice. You want a nice balance between all of it.
