In southern cooking a “roux” is a magical thickening agent created by combining a fat with flour and cooking it slowly until it turns a beautiful toasted brown color anywhere from latte to Hersey kiss. We use roux to thicken sauces and probably it’s most important role as the primary ingredient in gumbo. Louisiana gumbo is a wonderful dish resembling a stew of sorts but with such a depth of flavor that you just can’t get enough. Just hearing the word “roux” makes me want to start cooking. Cooking has been such a beautiful part of my life since childhood—-cooking with my grandmother on her farm in rural Arkansas and I’m thrilled to offer you delicious, made from scratch menus created by a team of powerful women in our kitchen in San Rafael. We cook from the heart, with the seasons with lots of laughter and love. I started my company with the intention of just offering planning services but the pull of the kitchen was too strong to ignore and now we combine both and it feels right. Our menus are creative and unique and reflect the seasons and the abundance of our local community.
